Hawaiian Delight

So I got an email from my dad reminding me to update my blog. I have been so busy since school started and also TV shows started. Today was a little crazy at work, we had our usual Rehab Meeting before seeing patients. We had 17 PT Evals today. 17!! at 830 am. Of course PT referrals keep coming in til 3:00 pm. It was crazy. Ever since MLK ( Martin Luther King Hospital) closed we have been busier. NOT COMPLAINING!! Anyways, then we had the Mish for dinner tonight. We had Hawaiian Delight. Shrimp and Pineapple Fried Rice, Teriyaki Salmon with Mango Salsa ..YUM-OH! The boys helped me set the table and make the yummy Vanilla cake with whipped topping . UMMMMM...Here's the recipe from Meiling Dawson

Pineapple and Shrimp Fried rice

Shrimp:
1/2 lb shelled shrimp
1 tsp sesame oil
1/2 tsp salt
1 Tbsp cornstarch
Oil for cooking
Marinate shrimp in the sesame oil, salt, cornstarch for a t least 10 mins. Cook shrimp in hot oil until no longer pink.
Rice:
3 tbsp oil
1 small yellow onion, chopped
3 cloves garlic,minced - we had the costco ones..SO AWESOME
4 cups cold cooked white rice
4 eggs,scrambled
2 cups chopped fresh pineapple
2 green onions,chopped
1/2 c cashews
3tbsp fish sauce - you can get this in any Asian markets..Paul doesn't not like this sauce
1 tsp sugar
1/2 tsp black pepper
2 tbsp soy sauce

heat oil. Cook the yellow onion and garlic for about 2 mins. Add the rice and heat through; add scrambled eggs,pineapple,green onion and cashews. Season rice with fish sauce, sugar, black pepper and soy sauce. Mix well and serve warm.

Mango Salsa
2 cups diced peeled ripe mango (about 2 mangoes)
2 cups diced fresh pineapple
1 cup chopped English cucumber
1/2 red onion
2 tbsp season rice vinegar
1 tsp hot sauce
1/2 tsp salt

Combine mango and the remaining ingredients

Salmon
Marinate salmon for 1-2 hrs in teriyaki sauce. Heat grill to medium high and coat with non stick cooking spray. Lay salmon on barbecue. Close and cook for 4 - 5mins until sear marks are visible. Rotate 45 deg. and repeat. Flip salmon when criss cross pattern is visible. Cook until firm and done.

Then the boys and I helped me bake the cake and set the table. It surely was a fun night. I have to go now. Season Premier for some of my fave shows is starting tonight.
